Flavoured with honey, fruits, nuts and melted chocolate, these Homemade Fruit and Nut Chocolate bars require no baking. They are very easy to make, requiring just a couple of hours for the chocolate to set. They make a great edible gift.
Ingredients for Fruit and Nut Chocolate Bars

- Chocolate - For the main fruit and nut chocolate bars use milk or dark chocolate.
- Dried Fruits - For this recipe I used a mix of dried fruits ranging from Apricots, dried dates, dried cherries and mixed dried fruit which often contains candied peel. Use whatever fruits you wish. This is a chance to use up store cupboard ingredients. Try to make it the same quantities in total.
- Nuts - Any nuts are fine, for this recipe I used flaked almonds and pistacio nuts which give a lovely vibrant green colour to the chocolate bars.
- Honey - Runny honey is best as it will mix better, but set honey is fine.
- Biscuits - I used Degestive biscuits but any biscuits with a fine crumb texture is fine. Don't crush them too much.
- Butter - I find butter gives the best flavour as it has more fat than block baking spread. Fat helps to carry all the wonderful flavours through the chocolate bars.
- White Chocolate - This is for the topping (not shown in the above image). It helps make this recipe stand out from my version of a Chocolate Tiffin. If you can't get hold of white chocolate, milk or dark chocolate is fine.
How to Make Fruit and Nut Chocolate Bars Step by Step
Grease and line a 10.5 inch (27cm) x 7 inch (17.5cm) baking tin with baking parchment. Melt the dark chocolate and butter in a large bowl over a pan of simmering water.
Take off the heat. Add the honey, followed by all the chopped fruits, crushed biscuits and nuts. Give everything a good mix making sure all the ingredients are coated in chocolate.
Spread the mixture evenly into the prepared tin smoothing out the top. Leave to one side while you melt the white chocolate.
Melt the white chocolate in a clean heatproof bowl over a pan of simmering water in the same way that you melted the dark chocolate. Take off the heat and carefully pour over the top of the fruit and nut mixture. Let the chocolate find its own level, although it may need a little coxing to fill the corners.
Place in the fridge to set, allowing a couple of hours for it to firm up. When set and firm to the touch, lift out of the tin and using a sharp knife cut into squares or bars.

- 75 grams butter
- 350 grams dark chocolate roughly chopped
- 2 tablespoons honey
- 10 digestive biscuits weighing approx. 130g (roughly chopped)
- 50 grams dried chopped cherries
- 50 grams dried chopped apricots
- 50 grams chopped dates
- 100 grams mixed dried fruits such as sultanas, currants and raisins
- 50 grams flaked almonds
- 50 grams pistachio nuts roughly chopped
For the Topping
- 300 grams White chocolate for the topping roughly chopped

About a week if wrapped well. We ate ours within a week in our house and they were still fine.

I've never frozen this kind of thing, so not sure how they would behave when thawed out, or how good the chocolate will look. Sometimes chocolate can develope white speckles after being in the fridge for a while.
