Line a baking tray with a sheet of baking parchment or a non stick baking mat.
Add the flour, salt, and sugar into a large bowl. Give it a little mix.
Using your finger tips, rub in the butter until you have fine breadcrumbs.
Add the chocolate chips and give everything a good mix ensuring all the chocolate is distributed evenly.
Mix the egg, vanilla extract and milk together in a small jug or dish then add to the flour mixture.
Bring everything together to form a stiff dough.
Spoon 12 individual mounds of dough onto the baking tray. Old Fashioned Rock cakes have a rough surface, so don’t worry about trying to make them smooth. Dust with the Demorara sugar. If you forget to do this, you can sprinkle the sugar on top after baking while they are still warm.
Bake in the centre of the oven for 15 mins or until baked. They should have a nice golden colour. If you choose to make larger Rock Buns, the baking times will differ and they will take longer to bake.
Take out of the oven and dust with demerara sugar while still warm if you forget to do this earlier. Leave to cool.
TIPS AND FAQ’S
Chocolate chips – If you can't get hold of a packet of Chocolate Chips, chop 100g of chocolate into small chunks. You can use Dark, Milk or White Chocolate.
Brown Sugar – Brown sugar always gives a slight nutty toffee flavour, but white sugar or granulated sugar will be fine.
How long will Chocolate Chip Rock Cakes Keep?These little cakes are best eaten on the day they are made. But will keep for a couple of days if kept in an airtight container.
